Cacio e Pepe is so simple in ingredients that it is hard to imagine how precise you must me to make it properly. Making the pecorino paste is the key and if you have the time to watch a few Youtube videos - it would be very useful. This dish is a traditional dish of Rome and worth every effort. It is simple but stunning
